Happy Birthday!!!

On October 23rd, 1958 Marsha Gail Parks was born!! For some of you who don't know who this is she is My Mother-in-Law!! Today is her 50th birthday!! I just wanted to wish her a GREAT Birthday!! We LOVE You!!

Pumpkin Bread

I LOVE this recipe!! It makes such a moist and yummy bread. I usually make 4 loaves at a time and it gets gone fast. Its great the next day with a little butter and a cup of coffee. You can always subsitute the pumpkin for sweet potato and it comes out perfect too!! I have also made it that way and its a hit! (just ask the people at Hoke Correctional lol)

Ingredients
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
2 cups sugar
2 cups pumpkin (cooked fresh or canned)
4 eggs, beaten
1 1/4 cups cooking oil
1 cup nuts ( optional)

Directions
1Preheat oven to 350°.
2Grease and flour 2 loaf pans.
3Mix all dry ingredients in a bowl; set aside.
4Mix pumpkin, eggs, oil, and nuts together.
5Combine mixtures and blend thoroughly.
6Pour into pans.
7Bake for 45-60 minutes or until a toothpick inserted comes out clean.
8Remove from pans and cool on a rack.

Homemade Fettuccine Alfredo

Serves 6

Ingredients
1/2 cup butter
8 oz. package of cream cheese
1 pint heavy cream
1 teaspoon garlic powder
salt
black pepper
2/3 cup grated parmesan cheese (preferably fresh)
1 lb fettuccine, prepared as directed

I add about 3 chicken breast cut in small pieces and browned in a little butter until cooked through to my sauce at the end. The recipe doesn't call for chicken but you can add if you want

Directions

1In a medium saucepan, melt butter.

2When butter is melted, add cream cheese.

3When the cream cheese is softened, add heavy cream.

4Season with garlic powder, salt, and pepper.

5Simmer for 15-20 minutes over low heat, stirring constantly.

6Remove from heat and stir in parmesan.

7Serve over hot fettucine noodles.


I made this for dinner tonight and it was a HIT!! It tasted so great!! I was very pleased with myself and the ease of the sauce!! Pair this with a fresh tossed salad and some garlic bread and you have a Great and Hearty Meal!
